Andrew Wong points out informatively that China has no fewer than 14 national borders, a phenomenon that has seen it absorb disparate culinary traditions throughout its own vast gastronomic history, and which informs the energetic and thrilling experimentation going on at his smart Victoria venue. So, take a culinary journey with the ‘Touching the Heart’ experience which includes clear shrimp dumpling, sweet chilli; rabbit and carrot glutinous puff; abalone flaky tart with aged balsamic vinegar; and Xian ‘lamb burger’ with sesame, coriander, chilli and Xinjiang pomegranate salad. Desserts are a little more restrained – coconut water ice, bird’s nest, fermented coconut, dried mulberries, yogurt and mochi.
