China has no fewer than 14 national borders, which means it has soaked up many culinary traditions over the course of its own broad gastronomic history. Chef Andrew Wong’s cooking acknowledges this and his upmarket and buzzy Victoria restaurant takes diners on a tantalising culinary journey via the ‘Touching the Heart’ set menu. This includes chilled smacked cucumber with trout roe, chilli, garlic vinegar, sesame seeds and coriander; duck with seared foie gras, plum sauce and cherry wood smoke, and Cantonese BBQ pork crackling with prawn, plum, truffle and honey vinegar. Desserts include a rich steamed duck yolk custard bun.
