Discretely hidden away on Sackville Street, just off Piccadilly, Amethyst is every bit a culinary gem from ex-Xier’s Carlo Scotto. The acclaimed Italian-born chef has worked in renowned kitchens across the globe, as well as in London’s top kitchens, including the likes of Murano with Angela Hartnett and Galvin at La Chapelle. Here, the ground floor is filled by a jaw-dropping communal chef’s table, blended with real amethyst and quartz, its irregular edges allowing all a view over the open kitchen, while downstairs, the low-lit Wine Cellar offers a more conventional experience. The tasting menu combines Scotto’s experience of Nordic and Japanese cuisines with French and Arabic influences and delivers with understated class, its beguiling creativity bound by balance, refinement and high technique, and driven by captivating flavours and presentation. There’s surprise at every turn; take charcoal-black cod in caramelised miso and naganegi dashi to beef with ras el hanout, sesame-seed-encrusted medjool dates and beetroot ‘ketchup’.
