Our View

Down below the gleaming-white expanses of the Merrion Hotel, The Cellar is the place for modern Irish cooking. Begin with dashi-seasoned calamari with fennel salad and citrus aïoli, and then wheel out the big guns of tradition for 28-day dry-aged rib-eye in Café de Paris butter with broccoli hollandaise, or a whole black sole from Kilmore Quay with garlicky spinach in lemon and caper beurre noisette. Or mix it up modern-style for seared halibut with lardo, charred cauliflower, salsify and broad beans in beurre rouge. Desserts with attitude include a chocolate-orange crémeux made with Valrhona, along with hazelnuts and a buttermilk and coconut sorbet.
