The cuisine at Chewton Glen is one of its highly regarded features. In the light, subtly hued Dining Room, modern British classics include pressed duck liver with almond, plum sake and toasted brioche; Isle of Gigha halibut with sticky chicken wings, aubergine, miso and lotus root; and Valrhona chocolate and orange mousse.
