Within the Mandarin Oriental Hotel in Knightsbridge, a surprisingly unelaborate dining room is kitted out with unclothed tables, with views over Hyde Park as well as a centrally sited kitchen with open frontage allowing diners occasional glimpses behind the scenes. What Heston Blumenthal has created here is the culinary equivalent of a research institute, with dishes from British history – often quite distant history at that – offering quite as much novelty to today's globalised standard palate as the avant-garde goings-on at The Fat Duck. The starter known as Rice and Flesh dates from the troubled reign of Richard II and is in essence a painstakingly timed saffron risotto topped with mouthfuls of tender calf's tail richly glazed in red wine. Then perhaps pause at the late Georgian era for 21-day-aged Hereford beef with mushroom ketchup and thrice-fried chips, perhaps followed by a gloriously elaborate raspberry tart lathered with Jersey cream, its sponge injected with olive oil, topped with corpulent raspberries filled with lovage cream and a pebble of gorgeously intense raspberry sorbet. A classic booze-sodden tipsy cake is garnished with a strip of sticky spit-roasted pineapple for a touch of exotic climes, while the cheeses come with gently spiced apple and plum chutney.
