Set in 22 acres of heavenly gardens and woodland near Windermere, the Cunliffe family’s tranquil Edwardian bolthole is the very essence of an urbane and luxurious retreat, done out in slick contemporary style and not a hint of chintz. Culinary matters are, as ever, a highlight of a stay, whether it’s in Gilpin Spice (with two AA Rosettes) or the flagship trio of dining rooms that goes by the nickname of its head chef Hrishikesh Desai. Mingling ideas from his own Asian heritage with pin-sharp contemporary European cooking, Desai breaks the crusty country-house dining mould at Gilpin, bringing a genuine feeling of individuality and excitement to the menus. Peerless ingredients are given a seriously labour-intensive workout, starting with the crispy soft-shell crab that comes with a sweet and sour zing and a dazzling array of supporting elements – Bombay celeriac, crushed peanuts, tamarind chutney and mango gel. Main courses, too, are handled with the same mixture of inventiveness and exciting contemporary eclecticism, as typified in a dish that takes marinated Norfolk quail breast as a focal point then adds in a fritter of confit leg meat with seeds, fruit and nuts, along with compressed apple, yogurt and cardamom gel. Luxurious lobster comes butter poached, and in a dumpling of claw meat with cauliflower, saffron potato, slow-poached lemon, garlic tuile and a subtly aromatised Keralan moilee sauce. Sure, there is plenty going on in these dishes, but nothing is done for novelty’s sake, and it all delivers vibrant flavour and artful colour in harmonious balance – a meat dish involving beef fillet with a ravioli of braised feather blade, shallot Tatin and pan-fried duck liver with a Tamil-inspired Khozambu red wine sauce being a case in point. A pre-dessert black pepper and crème fraîche sorbet clears the palate for dark chocolate délice of awesome intensity, served with pumpkin pannacotta, banana bread, salted caramelised hazelnuts and white chocolate ice cream.

With its wide cobbled streets, spacious green and views of the Solway Firth, Silloth is a fine Victorian seaside resort. Other towns along this coastline include Whitehaven, Workington and Maryport. Carlisle is well worth a look – once a Roman camp, its red-brick cathedral dates back to the early 12th century and its 11th-century castle was built by William Rufus.
