The luxuriant acres of Stoke Park were turned into Britain's first country club in 1908, the domed and pillared mansion house at its centre surveying some of the grandest golf the nation had to offer. Since then, the place has played host to pro-am tournaments and rock concerts, as well as providing locations for British cinema from James Bond to Bridget Jones. The interiors are splendidly preserved, particularly in the magnificent marble-pillared, extravagantly corniced and deep-piled dining room, arrayed in sunny golds and pastel yellow and named in honour of Humphry Repton, who created the gardens. It’s a grand showcase for the cooking of Chris Wheeler, a confident and inspired practitioner whose work stands out from the crowd in innovative dishes that mobilise the full range of contemporary technique, while maintaining respect for the prime materials. That's clear from the off in an opener of confit salmon boosted with teriyaki, lime-pickled cucumber and toasted peanuts. The rabbit terrine may seem more mainstream, but its accompaniments of mustard seed-pickled carrots, prune and Armagnac purée and cumin crackers lift it to a higher level. Main courses are built on impeccable prime materials, treated both with respect and with inventive energy. A workout of top-grade pork offers precisely cooked and deeply flavoured loin, belly and cheek, together with home-made black pudding, choucroute, houmous, charred baby gem lettuce and a punchy barbecue sauce to bring it all to life. If you can be tempted away from the meaty dishes, another winner might be a perfect balancing act of turbot, gently poached in almond milk and teamed with crab risotto and roasted almond beurre blanc. To finish, Valrhona’s Dulcey chocolate provides the foundations of a creamy délice matched with salted caramel, caramelised pecans and the acidic lift of yogurt sorbet.
