Anne-Sophie Pic may not be a household name on this side of la Manche, but she has earned her place in French culinary history at her renowned restaurant Maison Pic in the Rhône Valley in southeast France. Her base for conquering the UK’s foodies is a sleek space done out with leather, wood and mirrors in the swanky Four Seasons Hotel by Tower Hill, and her fine-tuned culinary imagination produces some powerful and unexpected flavour combinations in the contemporary French style. The cooking is really on song in a starter of Cornish crab, steamed with sobacha and dill pannacotta, with a fab Corsican clementine jelly. John Dory meunière with a purée of coco de paimpol haricot beans, sage and coffee-infused dashi is a beautifully constructed main course, and an elaborate dessert of smooth blackberry coulis, sorbet and fresh blackberry, with sencha and Sakanti chocolate mousse spiked with cubes of sencha jelly makes for an impressive finale.
