Set in an Elizabethan mansion of honeyed stone in 3,500 acres, any hint of starchy country-house formality is banished here, so dining is an informal affair in a rustic-chic setting, and the '25 Mile' menu reveals a kitchen that gets serious on sustainability and localism, with an abundant kitchen garden for seasonal supplies and minimal food miles.
