Set in a characterful 19th-century building on Marygate in the heart of historic York, Roots is sister restaurant to The Black Swan at Oldstead. A high-end operation offering seasonal farm-to-table tasting menus, diners eat in a spacious room illuminated by leaded windows and an open kitchen. Tommy Bank's family farm supplies much of the produce destined for dishes such as beef tartare with horseradish pannacotta and charcoal oil, which could lead on to perfectly timed lamb saddle with mint, lovage emulsion, kohlrabi and pickled ramsons. Strawberry, elderflower and woodruff is a typical way to finish.

Its city walls date from the 14th century and are among the finest in Europe. However, the gothic Minster, built between 1220 and 1470, is York’s crowning glory.
