Tucked away in the heart of St James’s, this luxurious hotel is home to one of London’s most seductive dining experiences, where the talented William Drabble has been producing dynamic and creative modern French cuisine since 2009. The dining room is a gem, small but perfectly formed, shimmering with rich, warm colours and bold contemporary artworks. This is an elegant and refined dining experience with the modern European cooking rooted in the classics. Expect big punchy flavours, precise execution and classic combinations with plenty of innovation. A high quality piece of seared foie gras is cooked precisely and teamed with smooth pear purée, tender confit pear and warm gingerbread. A well-executed grilled fillet of super fresh turbot is paired with Jerusalem artichokes and a sumptuous roasted chicken emulsion. To finish, pineapple is slow cooked in vanilla and rum and served with coconut sorbet and a punchy pina colada foam.
