Named after the river that runs through the hotel grounds, Bybrook has recently undergone a stunning refurbishment. As well as comfortable banquette seating, there’s a garden influence from verdant planters and nature-inspired artwork, with a new outside dining area overlooking raised beds where produce is grown. Quality underpins everything at Bybrook, and Robert Potter’s hyper-seasonal, seven course tasting menus showcase cooking that’s elegant and light. A starter of Cornish wild turbot, white asparagus, Petrossian caviar and seaweed butter could lead on to Herdwick lamb, morel, wild garlic and kohlrabi. Finish with coconut, mango, passionfruit and Kaffir lime.
