Our Inspector's view

Quality underpins everything at the Bybrook, named after the river that runs through the hotel grounds. There’s a formal air, as you’d expect at a luxury hotel, yet service is from an approachable and knowledgeable team. Robert Potter’s cooking is elegant and light, with the kitchen garden making a meaningful contribution, as can be seen in the duck starter – a beautiful terrine using ethical foie gras and preserved plum, which adds sweetness and acidity. The main courses keep up the standard with a beautiful piece of super-fresh turbot, and the beef with white asparagus, maitake mushrooms and red wine sauce delivers lots of rich flavour. Desserts are kept light, with a clever play on the theme of strawberries and cream or a very good burrata ice cream with apricot and citrus fruits.
