The Hollybush is a modern dining pub with a buzzy vibe and a hint of sophistication in the Oxfordshire town of Witney on the edge of the Cotswolds. You'll find a warm welcome, excellent local food, interesting wines and cocktails and local ales in a relaxed and contemporary setting. It's the perfect place for a casual night with friends, and special enough for a celebration with cocktails, good wine and inventive dishes. We serve seasonal British food - sourced locally as much as possible from local farms and producers. Tuck into your favourite pub dishes with an inventive twist as well as more sophisticated plates and our famous Sunday lunches. Head chef, Simon Bradley, joined in December 2020 from De Vere Cotswold Water Park Hotel and prior to that The Randolph’s restaurant in Oxford. Inventive menus are inspired by the best seasonal local ingredients. You’ll find clean, pared-back dishes with weekly changing specials, alongside fish and chips, pies and burgers with the Hollybush twist, they also push out the boat with more sophisticated plates like Pressed Confit Rabbit & Ham Hock Terrine, Confit Duck Leg and Sea Trout. Produce is sourced locally as much as possible from a local farms, butchers, Cotswold cheesemakers and vegetable growers. Bread, ice cream and more are all made from scratch. The Hollybush is set in an 18th-century building with low ceilings, original beams, wooden panelling and a wood-burner, eclectic furniture and original art. The large garden has plenty of undercover seating. The four unique dining houses in the garden are perfect for sheltered dining for small groups - seating two to ten they are all heated, insulated and decorated with bespoke furniture and original art. Planned before the pandemic, it turns out they’ve been ideal for friends and family giving that indoor dining experience in your own little bubble and sheltering from the worst of the British weather.

The county demonstrates how the strong influence of humans has shaped this part of England over the centuries. The Romans built villas in the pretty river valleys that thread their way through Oxfordshire, the Saxons constructed royal palaces here, and the Normans left an impressive legacy of castles and churches. The philanthropic wool merchants made their mark too, and many of their fine buildings serve as a long-lasting testimony to what they did for the good of the local community.
