The Imperial's Victorian founders couldn't have chosen a better spot for their hotel, whose clifftop position has wide-ranging views over the bay and Channel. The kitchen chooses its ingredients diligently, making good use of fish and local produce, and turns out well-considered, carefully-timed dishes.
