His formidable CV (most recently includes a four-year stint at The Barn at Moor Hall) and beguiling modern cuisine showcase innovative, finessed and detailed dishes that sing on the palate and please on the eye. Witness Newlyn monkfish with Cornish mussel, sea herbs and seaweed butter, while snacks, bread, amuse bouche and petit fours deliver additional bang. Modern Scandi good looks, mixing industrial elements with creams and pale greens, wooden surfaces with bow-back chairs and banquettes, all harmonise perfectly.
