Our Inspector's view

After thoroughly colonising Marlow with his big-hearted, refined and yet inherently simple cooking, Tom Kerridge has picked a glossy venue in a super-posh hotel for his first big-city venture. There’s red leather, brass and art to ogle at in a cavernous room whose decor is more clubby than pubby. As you’d expect from the jovial TV chef, the food is a celebration of Britishness, importing the culinary generosity from The Hand and Flowers via dishes that are big on flavour and impact – a starter of Cornish crab vol-au-vent dressed with mayonnaise, apple and avocado purée, all brought into vivid focus by a luxuriant crab bisque, being a case in point. Main course brings the gamey delights of Ramsbury Estate venison with carrot in various guises, coriander emulsion, and a side of venison chilli topped with aerated cheese sauce and crisp barley. To finish, a lush custard tart is enriched with brown butter and balanced with the astringency of buttermilk ice cream.
