Built by a Liverpool shipping merchant in 1823, Rothay Manor Hotel has kept many original Regency features. It’s a great example of a traditional Lake District country-house hotel, standing in attractive landscaped gardens close to Ambleside. Substantial investment has raised the bar, not least in the restaurant, which has a gently contemporary look that matches the adventurous, complex modern cooking with Japanese and Scandinavian influences. A sample à la carte starts off with scallop and kohlrabi with elderflower, dashi and sorrel, then moves on to halibut with mussel, allium, burdock root and sea aster. Chocolate with rice, miso, kaffir lime and cep is the finisher.

Carlisle is well worth a look – once a Roman camp, its red-brick cathedral dates back to the early 12th century and its 11th-century castle was built by William Rufus.
