Set within a 17th-century manor house, now a gorgeous boutique hotel, Fernery at Grove of Narberth supplies its chefs from an abundant kitchen garden producing a steady seasonal supply of fruit, herbs and vegetables, which you will meet on the plate. The dining room is elegant and understated, with a calming, neutral palette and fern-themed details – an intimate and relaxed setting for Douglas Balish’s dynamic food. In contrast to the enigmatic descriptions on the tasting menus, dishes are highly detailed and deliver dazzling flavours. ‘When Andy met Tim’ brings together oyster mousse with green herb jelly, apple and wasabi ice cream, while ‘Of the Land and Sea’ is beautifully timed piece of poached cod topped with scallop and hazelnut mousse and supported by a light fish-based velouté with superb depth, plus courgette, squash and poached mussels for texture.
