In a small side street in Hove, The Little Fish Market is a modest little operation, but it certainly punches above its weight. The setting is a light-filled space with pared-back contemporary decor and charming, well-informed service – delivered partly by chef-patron Duncan Ray himself. After stints at The Fat Duck and Pennyhill Park, Ray works here with meticulous attention to detail, producing stunning local and sustainable seafood cooked with exemplary accuracy and an intelligent creative edge. The menu may start with wild prawn raviolo, mussel sauce and leek, then follow with bream, kabocha squash, mushroom and braised gem lettuce.
