Housed in The Caledonian Edinburgh, a truly grand Victorian railway hotel with the unbeatable backdrop of Edinburgh Castle, 1925 at The Pompadour certainly retains plenty of original glamour and elegance over a century since it opened in the age of steam. Named after the famous mistress of Louis XV, ‘The Pomp’ has a genuine 'wow' factor and tables overlooking the castle and Princes Street Gardens are naturally the hot ticket for locals and city visitors alike. There is a real sense of luxury in this grand dining room with its remarkable collection of artwork, delicate plasterwork and high ceilings, although the formality of tablecloths has been ditched for a more contemporary look of darkwood tables and vibrant blue seating. Headed up by chef Dean Banks, the modern Scottish cooking has global influences, cleverly designed to maximise flavour combinations, while classic ideas are also clear, as in a starter of French onion soup and gruyère.
