Overview
Tucked away in a classy boutique hotel near Green Park, Michael Caines at The Stafford is a perfect fit for the celebrated West Country chef’s first foray into the big city. Interpreted by head chef Simon Ulph, expect a thrilling mix of Caines’s signature dishes imported from his flagship Lympstone Manor alongside some inspired new creations, all underpinned by intuitive classical culinary logic applied to superb British produce. A tartlet of Newlyn red mullet with brown crab custard, cucumber and seaweed relish is followed by pink and succulent Stoke Marsh Farm Hereford beef served with silky celeriac purée, king oyster mushroom, tender braised beef cheek, and punchy red wine sauce.
