Overview
In case you were wondering, Sael is named for the Old English word that signifies season, time and occasion. This latest part of Jason Atherton’s ever-increasing culinary empire occupies a dining room with a sophisticated brasserie feel – think green leather and velvet banquettes, silver birch wood panelling and prints by a Cumbrian artist. The food is modern British at its heart, under pinned by stellar ingredients, witness a sublime hand-dived Orkney scallop, timed to perfection, coral crumb on top, and a delicious leek sauce with moist clams. Elsewhere, there’s Wagyu and char siu skewers with calamari, lardo and chimichurri, or a rustic dish of cod cheeks and parsley casserole with smoked bacon.
