The tagline at KOL is ‘memories of Mexico, shaped by British produce’, which neatly encapsulates the fusion ethos at Diego Lastra’s upbeat restaurant, where warm tones and textures, beams, leather seating, and displays of heritage items create an engagingly authentic vibe at this innovative Mexican. A centrepiece open kitchen sends out seven-course menus of labour-intensive, super-modern dishes that express Mexican culinary innovation through British ingredients, whilst championing wild foods and seasonality. Bright, fresh, multi-layered flavours dance on the palette in elegantly presented ideas, among them short rib quesadilla with cep purée and gooseberry salsa, then duck mole with chilli, honey and pickled beetroot.
