Channelling a moody rock and roll vibe, The Wilderness is housed in a suitably post-industrial setting in a former factory in central Birmingham’s gentrified Jewellery Quarter. Inside, the kitchen takes centre stage in a surprisingly airy dining room done in sepulchral shades of grey and black, with splashes of white graffiti. Chef Alex Claridge’s cooking is clever, creative and fun in precise and complex dishes that deliver big-time on flavour. Beef tartare comes with garlic emulsion and mustard ice cream, then gold-standard Ibérico presa pork is simply served with grain mustard and pork jus, BBQ potatoes in beurre noisette and a Caesar salad.
