The confident cooking achieves accurate execution throughout and a meal might begin with Dorset crab beignet, brown crab custard, smoked cheese crisp, apple, finger lime and dill before perfectly timed BBQ monkfish, coco bean and Morteau sausage cassoulet, three-cornered leek and brown butter hollandaise.
