The luxurious ivy-covered 19th-century South Lodge hotel is surrounded by 92 sylvan acres, which makes a meal at Ben Wilkinson’s eponymous restaurant all the more special. Taking the chef’s table concept to another level, The Pass is a 28-cover restaurant with guests sitting close – and indeed invited in – to the kitchen on the other side of the floor-to-ceiling glass walls, to witness chefs tweezering the meticulously composed dishes into shape. The tasting menu showcases spot-on innovative cooking that’s beautifully presented and always has an eye on the seasons. Refined flavours keep coming all the way from the first dish of Louet-Feisser oyster fermented grains, turnip, trout roe and dill through to a dish of duck, white asparagus, spinach, morel and vin jaune.
